Quarantine: Week 6
The weather is still unseasonably cold and windy here. Mike and I are wrapped up in blankets 24/7, making all the comfort foods this week. Here’s Chicken Pot Pie: The Sequel:
We made home made pizzas and cauliflower mac and cheese. We also experimented with new recipes, like smothered pork chops. The recipe for that is here on Southern Living.
They turned out AMAZING. We will absolutely make this again.
The white wine cream sauce was so good we saved the leftovers and poured it over eggs and home made hash the next morning. Well, Mike did. I poured nacho cheese from leftover Mexican takeout over mine.
Saturday was the one day this week where it didn’t snow, rain, or have 50 mph wind gusts. We were desperate to get outside, so we drove to Walden Pond and walked around the conservation land that surrounds it. Thankfully, it’s one of the few parks that remain open to the public and it’s big enough that many people can enjoy the hiking trails without coming into contact with one another.
Henry David Thoreau was pretty good at social distancing back in his day.
They say the quarantine is boosting people’s creativity. Well, we decided to turn our living room into an outdoor campsite. We put down blankets by the fireplace and set up my little star projector on the ceiling. Then we kicked back and enjoyed the otherworldly soundscapes provided by Nine Inch Nails’ latest entry, Ghosts V. 10/10, highly recommend indoor camping.
I also invented a new shot.
This is called the Happy Camper. Rim a shot glass with the nutty salt and sugar mix you find at the bottom of your favorite canister of trail mix. Then pour 1 ounce of Screwball peanut butter bourbon into the glass. Toast your best indoor camping buddy and enjoy.
This weekend our friends Isabelle and Brendan were married, twice! Once in a Zoom wedding with virtual friends and family, then again in person with a socially distanced officiant at city hall. They made the news today, which is awesome. Congrats you two!!
Mike and I also participated in a drive-by birthday party for Mike’s niece, Mary.
Mike also received a lovely handmade card from Mona Elliot of the local band Victory at Sea. Let’s bring old fashioned correspondence back. A pandemic may have us socially distancing, but we can find wonderfully creative ways to keep life going with our friends and family.
